Double Peanut Butter Cookies, Yah Baby!


This has been my favorite peanut butter cookie recipe for years, I love the soft chewyness of it. I do not like those hard things with the criss cross shape on them (you know what I'm talking about!)
So I had this epiphany about adding peanut butter chips to the peanut butter cookie and they turned out awesome, careful though, when you start eating these, you won't be able to stop!

Double Peanut Butter Cookies

1 c. butter, softened
1 c. smooth Peanut Butter
1 c. sugar
1 c. brown sugar
2 eggs
2 1/2 c. flour
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 3/4 c. Reeses peanut butter chips (just eat the remaining 1/4 c. while you're making these)

Preheat oven to 350.
Cream together butter, peanut butter, sugar, and brown sugar for 2 minutes. Add in eggs and continue beating. Add in flour, baking soda, baking powder, and salt. Stir in peanut butter chips.
Bake for approximately 11-13 minutes until lightly browned.

Oh wow cam! I LOVE peanut butter cookies! I hate those hard ones also!! gross!! I have a question though, I see you used butter for this recipe. Does that mean that as long as I dont overbake them that they will stay soft even after cooling? What if I used /gasp lard instead, i heard that makes cookies very soft always, is this true? HELP ME OUT!!

Mike,
Yes, after they cool these cookies do stay very soft for days. I have never used lard because I've always been satisfied with butter, I love the taste and I think it's healthier than lard! If you were to use lard, I don't think the taste of the cookies would be quite the same.

Can you bake as one large cookie bar and cut into bite size pieces?
if so how long would you bake and what size of pan would work best.

If I were to try that I would use a 13X9 pan and keep the temp the same, 350. Good Luck, they would be great as bars! Instead of the peanut butter chips you could slice up snickers bars and push them down into the bars and then bake. I do that with Milky Way bars and chocolate chip cookie dough or brownies and it is so good!
